Ingredients
- 900 g potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 2 tsp dried rosemary, parsely, thyme, or basil (total)
- 1/2 tsp paprika
- salt to taste
- black pepper to taste
Directions
- Preheat the oven to 425 F.
- Peel and cut potatoes into small cubes.
- Soak potatoes for 20 minutes to an hour (for a fluffier potato). Drain and dry potatoes.
- Toss the potatoes with olive oil, garlic powder, herbs, paprika, salt, and pepper.
- Spread them in a single layer on a baking sheet and roast for 30 to 35 minutes or until browned and tender.
