Oven Roasted Potatoes

Ingredients

  • 900 g potatoes
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp dried rosemary, parsely, thyme, or basil (total)
  • 1/2 tsp paprika
  • salt to taste
  • black pepper to taste

Directions

  1. Preheat the oven to 425 F.
  2. Peel and cut potatoes into small cubes.
  3. Soak potatoes for 20 minutes to an hour (for a fluffier potato). Drain and dry potatoes.
  4. Toss the potatoes with olive oil, garlic powder, herbs, paprika, salt, and pepper.
  5. Spread them in a single layer on a baking sheet and roast for 30 to 35 minutes or until browned and tender.
