Ingredients
- 4 medium potatoes, cut into 1/4-in sticks
- 1/4 cup extra-virgin olive oil
- 2 tbsp chopped fresh thyme leaves
- 2 tsp Creole Seasoning
- 2 tsp smoked paprika
- 1/2 tsp ground cayenne pepper
- flaky sea salt
Directions
- Preheat the oven to 425 F.
- Place the potatoes on a large rimmed baking sheet (or two, if needed), making sure not to overcrowd the pan. Drizzle with olive oil and season with the thyme, Creole seasoning, paprika, cayenne, and a large pinch of salt. Gently toss to coat and spread out evenly.
- Bake for 15 to 20 minutes, until golden. Flip and bake until deeply golden and crisp, 15 to 20 minutes more.
- Serve hot with additional salt as needed.
