Avocado, Feta, and Herb Dip

Ingredients

  • 1 ripe avocado, chopped
  • 2 tbsp olive oil
  • 7 ounces (200 g) feta
  • 2 handfuls cilantro, roughly chopped
  • 1 handful dill, roughly chopped
  • 1 clove garlic, crushed
  • 1 long red chili pepper, medium heat, deseeded and chopped
  • 4 tbsp Greek yogurt
  • zest of 1 lemon
  • juice of 1/2 lemon
  • salt (optional)
  • 1 tsp sesame seeds

Directions

  1. Place the avocado and oil in a food processor fitted with the steel blade and pulse to break up the avocado into smaller pieces, about 10 seconds.
  2. Add the feta, herbs, garlic, chili pepper, yogurt, and lemon zest and juice. Pulse until the mixture is combined and has a rustic, slightly chunky texture.
  3. If you want to thin it out, add a bit more lemon juice, about 1 teaspoon at a time. If you'd like it thicker, add some more yogurt, about 1 teaspoon at a time. Adjust to taste with salt, if desired.
  4. Sprinkle the sesame seeds on top and serve.
